Gilbert, a graduate of the Pennsylvania Culinary Institute, is the president/owner of Passionate Culinary Enterprises. Before that he worked as the executive chef of Onyx and Suede Bar, two swanky restaurants at the Telluride Capella Resort in Colorado. While there he capitalized on farm-fresh ingredients sourced locally.
